BANANA TEA BREAD

 

BANANA TEA BREAD

 

Makes 1 loaf 9″x5″x3″

1 3/4 cups sifted soy flour or all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/3 cup canola oil

2/3 cup sugar

4 egg whites, well beaten or 2 eggs

1 cup mashed bananas, (about 2-3 bananas)

 

Preheat oven to 350° F.  Sift flour, baking powder, soda and set aside.  In a medium size bowl blend margarine and sugar until creamy.  Beat in eggs one at a time.  Add flour mixture, alternating with bananas, until well blended together.  Spoon into a lightly greased and floured loaf pan. Bake in 350°F. for 1 hour and 10 minutes, until loaf pulls away from the sides of the loaf pan.  Cool 10 minutes upright for 10 minutes, then remove from a pan and cool on a wire rack.
